Our rich Imperial Stout is blended from a mix of bourbon barrels from distilleries such as Heaven Hill, Wild Turkey, and Buffalo Trace, each aged in freshly emptied bourbon barrels for 8-14 months. Expect flavors of chocolate and vanilla, oak, whiskey, and molasses, followed by caramel, berry fruit, and almond.

After Bourbon County Stout is barrelled each year, only time can tell exactly how it’ll turn out. The temperature extremes of the Chicago climate draw the beer into and out of the freshly-poured whiskey barrels’ wood, imparting unique flavours in strengths and combinations that vary from one year to the next.
