RICH. COMPLEX. INTENSE.

In 1992, former Goose Island brewmaster Gregory Hall wanted to brew something truly unique for the brewpub’s 1,000th batch. A chance encounter between Greg and Jim Beam’s Booker Noe led to Goose Island acquiring the barrels for what was to become the world’s first bourbon barrel-aged beer: Bourbon County Stout.

30 years later, our passion for discovery and dedication to quality means Bourbon County Stout is still setting the global standard for barrel-aged beers. 

Released alongside some often wildly imaginative variants, each year's Original strives to honour Greg's original recipe, and the 2021 vintage is no exception.

Aged in a mix of bourbon barrels from Buffalo Trace, Heaven Hill and Wild Turkey distilleries, the resulting beer boasts a rich, complex mouthfeel with an exquisite blend of chocolate, vanilla, oak, whiskey, and molasses flavours, followed by caramel, berry fruit, and almond notes.

In the years since the first batch of Bourbon County Stout was brewed, the folklore surrounding the beer has grown, taking on an almost mythical quality.

That’s why a group of Goose Island employees set out to uncover the full story of Bourbon County Stout. What we found was a story larger than we had ever realised. A story that uncovers a large cast of characters, crosses state lines, and spans generations. From the loggers that down the American White Oak used to make bourbon barrel staves, to the distillers that fill and age bourbon on those staves.
